Taco Night

My husband and I love tacos! In fact for our first date we went shopping for food, went back to his place and made tacos together. So romantic. :)

Tonight we once again did a different taco creation and LOVED it. It's simple, filling, and delicious!



But first-- I've decided to stop buying packets of taco seasoning, what a waste of money! Also, this will reduce the amount of sodium you intake and all of those other nasty preservatives and things I can pronounce!

I'm making my own and chances are you have most of the spices in your cupboard right now.

 Enter messy spice cupboard!

This makes a lot so store it in an airtight container and use next time. I use a well cleaned pasta sauce bottle.

Sorry for the lame bottle, I usually have them painted and pretty!

Taco Seasoning:

1/4 cup chili powder- on this, feel free to add a bit extra.
1 1/2 tsp. garlic powder
1 1/2 tsp. onion powder
1 1/2 tsp. crushed red pepper flakes
1 1/2 tsp. dried oregano
1 Tbsp. paprika
3 Tbsp. ground cumin
2Tbsp. sea salt
2Tbsp. black pepper

Mix all of this together and add about 2-2 1/2 tablespoons to your browned, drained ground beef..
We like it pretty spicy so we pushed the upper end of measuring.

Keep this on hand and you will be set and never have that moment when you have browned beef only to find out you have no seasoning! So sad! :(

Now on to today's tacos.

1 lb. Taco meat (of course, with the above seasoning!)
2 cups cooked long grain white rice
1 container Rojo Salsa
1 can black beans
1 can corn

Be sure to prepare your taco meat in a really large skillet. One finished add everything else. Just dump it all in!

Mix well, everything else will heat up quick, just a couple of min.

Grab your favorite tortilla and fill with all of your favorite fixins!! (We love Chalula hot sauce. Mike can add it to just about anything and it's a sin if we ever run out!)


This is what we had left over after dinner! Seriously this makes a ton! Hello lunches for the rest of the week! This will easily feed your hungry family- and then some!
