Stuffed Bell Peppers

We had some friends over on Monday night. They are the greatest and I look forward to the time we get to spend laughing about life and planning adventures with them.

We've kinda taken to eating at home with friends to lower our costs and it's fun to see what they'll bring. I always get great ideas of healthy and easy foods to cook for my man!

So L&R came over and sure enough they brought great food! STUFFED BELL PEPPERS!

She made up the recipe and it was fabulous!


Don't those look amazing??  Here is the recipe:

Peppers:
4 Big Bell Peppers, any color you like
Cut off the tops and clean out the insides - seeds and all

To make the peppers stand up by themselves, barely cut the bottoms off (don't cut into the hollow part of the pepper)

Boil peppers in water and 2 Tablespoons olive oil for 5 minutes

Filling:
1 package dirty rice (make as directed on package)

Saute in olive oil: 
Green onions (as much as you like)
Half an Onion
Two Tomatoes

Add:
can of corn
can of black beans
cooked dirty rice
half can of tomato sauce
garlic powder, onion powder, salt and pepper
(stir and heat through)

Preheat oven to 350 degrees
Place boiled peppers in a 13x9 baking dish
Fill each pepper to the top
Top with cheese if desired
Bake for 20-25 minutes!

I loved these! They were super filling and colorful! 

I talked to Lauren the next day and she said they had extra filling and were using them for tacos the next day! What a great way to spread out meals! I love when I can cut my cooking down any day!
