Creamy Chicken Enchiladas

Tonight Mike and I had a friend from the team over. It was a last minute thing so I had to pull something out that was sure to please! Enter Chicken Enchiladas!!



These are my go to when I need something that is quick but still fantastic!

Here is what you need!

Ingredients:

3 large chicken breasts (3 cups cooked and shredded)
2 - 4oz. cans of green chilies
1 can cream of chicken soup
1/3 cup sour cream
dash of onion powder
pinch of cumin
8-10 medium tortillas

So while the boys played some Wii I got to cookin!


Directions:

Preheat the oven to 350

Cook your chicken however you want. I like to grill mine but our grill is out of commission so it's just boiled. (I know not the best way to cook chicken but for this it turns out really well.)


Shred your chicken well. It should come to about 3 cups.


Mix in the green chilies, cream of chicken and sour cream. Throw in a dash of onion powder and pinch of cumin. (the seasonings aren't entirely important but I just like to add a little something to everything.)

Spread the filling down the middle of your tortilla and roll up!

(my counters match those tortillas well)

Line then up in the 9x13 pan and cover with cheese. We love the cheese!

 
Bake at 350 for 25-30 min. The cheese will be bubbly and delicious!

Serve and enjoy!



I would say the boys enjoyed it! They were happy and filled up!
